Ingredients
- 400 gramms fusilli pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 5 cups fresh spinach leaves
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- Salt and pepper to taste
- Pinch of nutmeg (optional)
- Lemon zest (optional)
- Fresh basil leaves for garnish
Instructions
- Cook the Pasta
- Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- Sauté the Garlic and Spinach
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach leaves and cook until they are wilted, about 3-4 minutes.
- Prepare the Ricotta Mixture
